Getting Out of My Cooking Rut with the Earthbound Cook
I try to convince myself that heating up sauces from Trader Joes to pour over precooked Safeway or Costco chickens isn't so bad. It could be worse, I could be heading to the local drive through just to get a meal on our table. But when I'm stretched for time, I admit I turn to a microwave and a jar of curry.
Anyway, all that is going to change. I'm going to start with a realistic goal and and try to put two freshly cooked meals on the table each week and my new inspiration is the Earthbound Cook by Myra Goodman.
This lovely cookbook contains 250 recipes for delicious dishes as well as a helpful reference book full of easy to follow tips (which I can certainly use) and detailed ingredient information. It is also contains great suggestions on how to make your kitchen more eco-friendly--and the photos are gorgeous!
To date, I have made her Mushroom Barley Soup and the Asian inspired Sesame-Ginger Asparagus with Tofu. Both were very easy to make and super tasty!
I've been skimming through this book over the last few days and marking all the recipes I want to try. I'm truly committed to moving from "warming" to actually cooking. If you've got a favorite recipe, please email me or leave a comment. I need all the suggestions and inspiration I can get!
